Ingredients
Three slices of baguette spread with basil pesto.
– Three 16/20 sized tiger prawn peeled and de-veined tail on.
Tbsp. each of:
– Roasted shallot
– Roasted garlic
– Red onion
– Tsp. of minced garlic
– 1/4 cup diced Roma tomato
-1 roasted Roma tomato rough chopped
– 5-6 cherry tomatoes halved
– White wine
– Dried mixed herbs (Italian blend)
– Olive oil
– Salt & Pepper
– Garnish with sliced avocado, shaved parmesan cheese and balsamic reduction.
