Serves 2 with extra dressing
Ingredients:
-1 Head Romaine heart, chopped
-½ 250g Ball of Fior di Latte (or Bocconcini/Fresh Mozzarella), cut into chunks
-1 Orange, segmented
– 1 Avocado, diced
-1 Tomato, diced or 1 cup cherry tomatoes halved
-1/3 Cucumber peeled and cut into chunks
-1 cup Fresh Seasonal Berries (strawberries, raspberries, blackberries or blueberries)
-1/8 Red Onion, sliced thin
Dressing:
– ¼ cup Orange Juice
– ½ tsp Dijon Mustard
-¼ cup Wine Vinegar (De Bakker’s loves to use Vinegar Works Raspberry)
– 2 Tbsp Honey
-½ cup EVOO (Extra virgin Olive Oil)
Whisk and add salt and pepper to taste.
Toss together ingredients with delicious dressing and enjoy.
